The average working voltage a cell is labelled with — 3.7V for a LiPo cell, 1.2V for NiMH — rather than its full or empty voltage.
An "11.1V" 3S LiPo is actually 12.6V fully charged, and most ESCs cut off around 3.2 to 3.4V per cell under load. Ratings and airline Wh figures are always calculated from nominal voltage.
